In addition to Regulait's built in options for Categorizing Vendors (ie. Type, Service), we can easily add new options using two ways.
While adding a new Vendor, we can select 'Add New' inside a Vendor category drop down menu, instead of selecting from the drop down list (marked with an arrow below).
the Add New Item button is marked with an arrow Now simply name the new Vendor Type.
The new Vendor Type added is now a permanent Type in our Type list.

On the Vendor Management page, click on the Settings tab (marked with an arrow below).
Then select one of the Vendor categories from the list.

Circled below is the button that allows us to add a new item to the category.
Marked with an arrow below is the pencil icon, clicking it allows us to edit an existing item.

Once again, we can edit, delete and add a new item to the Service Provided category.
